HSE Rhum Blanc Agricole Rum

HSE Saint Etienne Rhum Agricole Blanc AOC is a rum from the French island of Martinique. They have established a set of rules for their rum, in the same tradition as one might know for Cognac and Champagne. They call their style Rhum Agricole.

Rhum Agricole is produced using sugarcane juice, as opposed to the most common method, where the sugar byproduct molasses is used to produce the rum. Agricole rum is therefore significantly different from the (sweet) Spanish style. The rum is drier, and can in many ways seem more like whisky than rum.

HSE Saint Etienne Rhum Agricole Blanc AOC is the only rum in the world that is gradually reduced in alcohol, where it is diluted from 70% to 50% over a period of 2 years. Others typically reduce the entire quantity at once right after distillation and then bottle it shortly after or in the following months. This technique allows the rum to rest and develop far more than any other white rum, as the reduction process occurs naturally through evaporation. This prevents the delicate aromas and mouthfeel from diminishing, as the actual amount of water added is reduced.
