Isle of Fionia Sjæl Organic Single Malt Whisky
This 2026 release of Isle of Fionia Sjæl PX Cask Finish Organic Single Malt Whisky is from Nyborg Destilleri and exclusively made from their "new" pot still, which they acquired in 2017 (after having distilled at Ørbæk until then).
The Isle of Fionia Stilhed whisky is initially aged in bourbon casks and has undergone a final maturation in PX (Pedro Ximenez) sherry casks. The bourbon casks impart vanilla and soft oak, while the sherry cask adds raisins, figs, and caramel. In fact, the whisky is not as sweet as one might expect from using PX sherry casks. Instead, it offers plenty of body and character.
