Opthimus – Rum from Oliver & Oliver

Opthimus is a rum brand from the Dominican bottler Oliver & Oliver, who is also behind brands such as Ron Quorhum, Cubaney, Presidente, Punta Cana Cluband Exquisito. Oliver & Oliver is a family-owned enterprise with roots in Cuba, but is now located in the Dominican Republic, where a lot of our rum comes from.

Opthimus is dark rum, and like all rum from Oliver & Oliver, it is rum in the Spanish, medium-sweet style, made from molasses and aged using the solera method. The post-aging in, for example, whisky and sherry casks helps to give the different rums their individual flavour notes and expressions.

Aging using the solera method

Opthimus rum is aged using the Spanish solera method. The solera method is a blending and aging system, which is also used for the production of sherry, port wine and wine. In short, the system works by blending older vintages with younger vintages in a special pyramid system of rum barrels. This means that solera rum is a blend of young and old rum and that the age stated on a solera rum is the oldest rum in the blend.

So, how old is an Opthimus rum? Opthimus is solera rum, and this means that the age stated on the bottle is the age of the oldest rum in the blend – and thus not an expression of the age of the entire rum blend.
