Highland Park's unique character is due to the peat used as fuel for drying the grain. This particular peat has absorbed salty waves for centuries and imparts a heather-like note to the whisky. For this Highland Park Single Malt 25 Year Old whisky, only a very limited number of casks have been used, hand-picked by the master blender. He has followed the development of the casks since they were laid down for maturation in 1994 and carefully blended them according to sweetness and smoke. The whisky has matured in a blend of first-fill and refill bourbon casks, as well as European sherry casks, and after maturing for over 25 years, it has achieved an unusually soft character. This 25-year-old Highland Park is a "Spring 2019 Release" with a lightly smoky aroma with nuances of honey, chocolate, heather, and ripe fruits such as melon and apricots. The taste is nutty with hints of honey and Oloroso Sherry. The finish is medium dry with heather peat smoke and a delicious salty finish. 46% – 70 cl.
