A Unique Distillery with Roots in Family and Nature

Since 2010, Thy Whisky, a family-owned distillery located in the heart of Thy, has been setting new standards for Danish whisky production. The distillery is run by Ellen, Andreas, Marie, and Jakob, each contributing their unique skills and passion. Ellen and Jakob are responsible for field work and daily operations, while Andreas and Marie focus on product development and marketing. Together, the family has created a distillery that combines tradition and innovation. The distillery uses grain from its own organic fields and has developed its own innovative malting system. With a unique "single distillation" process, they manage to preserve the authentic aroma and taste of malt and grain.

Gyrup, the ancestral farm where the distillery is located, has been in the family's possession for eight generations and spans over 500 hectares of organic fields. A wide variety of grain types such as barley, rye, spelt, oats, and wheat are grown here, all contributing to the distillery's unique flavour universe. In 2015, the distillery was equipped with its own malthouse and distillery, enabling a fully integrated production from field to bottle.

Thy Whisky has gained national and international recognition. Among the highlights is that their Thy Whisky No. 9 – Bøg was named Europe's best single malt in Jim Murray's Whisky Bible 2020. This is just one of many achievements that have put Thy Whisky on the world map.

Thy Danish Single Malt Whisky

This classic is based on barley grown on the family farm and malted on-site.

It is aged in a combination of Oloroso, Pedro Ximenez, and bourbon casks,
which provides a balanced and rich flavour profile.

Thy Spelt-Rye Danish Malted Rye Whisky

Inspired by Danes' love for rye and rye bread, this whisky is a tribute to rye. The grain, consisting of rye, wheat, and barley, is malted on the family farm and aged in new American oak casks.

Tasting notes: Vanilla, pink peppercorn, caramel, citrus, and heather blossoms.

Bøg Danish Single Malt Whisky

This whisky is truly special. The barley is smoked with beech wood during malting, which adds a characteristic smoky profile. Subsequently, the whisky is aged in Oloroso sherry casks, which impart a warm and sweet finish.

Tasting notes: Baked fruits, full maltiness, dried fruit, and beech smoke.
