A history on tracks
The buildings that today house Nyborg Destilleri served as a workshop for Danish State Railways' freight trains for 125 years. When the Great Belt Bridge opened, the train workshops closed, and for over 13 years, the 4,000 m² stood silent and dilapidated. In 2011, brothers Nicolai and Niels Rømer took a bold step when they bought and revived the decaying train buildings.
Since 2009, they had been experimenting with organic whisky, gin, and rum in the brewery's cellar in Ørbæk. This passion grew, and in 2017, Nyborg Destilleri was inaugurated with production, a shop, a cafe, a restaurant, and tours all under one roof.

Organic, Funen-made, and award-winning
Everything produced at Nyborg Destilleri is organic, and with a few exceptions, the whisky is made from non-peated Funen malt. In addition to whisky, the distillery produces a variety of spirits, including aquavit, and several of these spirits have won awards in renowned spirits competitions.
Through the historic halls
In the beautifully restored halls, the whisky warehouses quietly mature their casks, alongside a cafe, shop, and restaurant (Restaurant Remisen), where guests can enjoy food with a view of Nyborg Fjord.
An old locomotive stands as an iconic reminder in the middle of the warehouse, providing a historical focal point among whisky casks and production equipment.
An experience for all senses
Visitors can experience the entire distillation process from copper stills to finished bottle. Tours and tastings provide an understanding of both the craft and the history behind it.
It is a place for whisky enthusiasts and those who are simply curious about an authentic experience in a historical setting.
