After distillation, the rum matured in ex-bourbon casks until bottling in January 2023, when it was bottled at a cask strength of 58%. SBS Belize 2005 rum initially has aromas of leather and tobacco, but after a short time in the glass, it also develops notes of molasses and caramel. The taste is dry and has plenty of oak from the long maturation in a tropical climate, followed by lots of vanilla and caramel. SBS Venezuela 2006 rum is not chill-filtered and has no added sugar, color, or other additives.
