After a long fermentation, the whisky is slowly distilled twice in a custom-built copper pot still. This produces a clean new spirit, which already has fruity notes of malt, peach and apples.\u003c\/p\u003e\n\u003cp\u003eAfter distillation, Mosgaard Organic Whisky Pedro Ximenez cask is first aged in small, new French oak barrels and then spends an additional year to eighteen months in custom-built barrels that previously contained Pedro Ximenez sherry. The very small barrels provide more contact with the wood, and thus faster maturation. The sherry cask, together with the French oak barrel, creates a good balance between tannins and sweet sherry notes.
