Fermented with Pinnacle and Anchor yeast. Watered down to 46% from cask strength, which is 63.2 - 63.6%. Without chill-filtration or colouring and with a residual phenol level of 19.7 PPM.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eTorabhaig Legacy Series Chapter 3 Cnoc na Moine has aromas of subtle peat smoke, accompanied by notes of orange peel, tart fruit, and a hint of dying embers. These aromas are enhanced by touches of vanilla sweetness and fresh oak notes. When you take a sip, you experience the peat returning to the palate with a distinctive BBQ note, followed by pepper, a slight balsamic acidity, and more sweetness, balanced by gentle hints of cedar and leather. The depth you taste can be attributed to the sherry casks. In the finish, you experience a wonderfully harmonious balance between the influence of sherry and Torabhaig's integrated peat and spice structure, shining through in a long and pleasant smoky finish.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eTorabhaig is the first distillery built on the Isle of Skye in 190 years, and only the second legal one ever. The distillery is a product of its surroundings – shaped by a wild landscape and climate. The distillery is one of the new and young distilleries in Scotland – founded in 2013 – started distilling in 2017 – bottled their first ever batch at the end of 2020. Although it is a new distillery, they still use traditional methods.
