Tarquin's Cornish Pastis
Tarquin's Cornish Pastis is made in idyllic Cornwall in Southern England, but Pastis is originally a French anise-flavored spirit that came about in the wake of the ban on Absinthe. Pastis is most often enjoyed with water added or on the side. Water changes the chemical composition, as the oils are insoluble in water, so pastis changes from clear to a watery milky white, much like raki or ouzo. Nose: Large and with black licorice right up front, opening into citrus and green notes. Taste: Sweet fennel seed and licorice. Spicy like pepper with a long finish, creamy but dry. 42% - 70 cl.
